Strawberry Basil Soda

I love this part of the year. Days are longer, I'm constantly outdoors, and my local farmers basket is back stocking my fridge with delicious homegrown vegetables. Last week's basket was full of yummy goodies like squash, zucchini, greens and my favorite, strawberries. We were practically over run with them! Speaking of over run, our basil plants are taking off with all this sunshine and rain. So instead of letting them waste, I decided to try my  hand at making soda. Now I know most of my recipes here are health focused, but soda can be healthy too! Homemade sodas have half the sugar of regular soda and have no preservatives what so ever. Score!

Here we go:

Strawberry Basil Soda 

1 cup sugar 1 cup water 2 cups strawberries, trimmed 10 basil leaves soda water


Boil the sugar and water until the sugar is dissolved. While that's dissolving, trim the tops off the strawberries. Add in the berries and boil for at least 10 minutes. Add the basil leaves and simmer for 30 minutes, this will allow all the flavors to combine. Strain the mixture over a bowl and keep the juice. Discard the berries and basil leaves. Let the mixture cool before using. Carefully pour into a stopper bottle (or a bottle of your choosing) and add the soda water. Stop the bottle and gently shake to combine everything. This will stay fresh in the fridge for a few days. Sip, drink and enjoy!

I love making fruit sodas because of the versatility. This one is especially nice because it's just a little bit sweet and it smells heavenly of strawberry and basil (yum!). I've pinned a few that I really want to make in the coming days. Speaking of versatility, you can also add a splash of half and half cream and turn this into an Italian Soda! Delicious! This is such an easy and sweet treat to make, especially if you're like our household and rarely keep any kind of drink other than water or juice in the fridge. Plus, it's perfect for parties!
